Hi and welcome - we are David and Holly Jones from Manna from Devon Woodfired Cooking School and this is our masterclass on cooking with a cast iron Morso Forno. 

We've been teaching courses on woodfired ovens at our school in the south of the UK since 2008 and have taught many students here at the cooking school and other venues around the UK. Now you can learn with us wherever you are in the world.

What Equipment you'll need for your Morso Forno

We have collected lots of equipment over the years but in this video David will show you what we use the most so effectively the things you need to get started.

If you have everything to hand, in the same place every time you cook, then you'll get to know where everything is and you won't have to go searching for that missing bit of kit which can be quite frustrating. 

We have a separate equipment stash for cooking outdoors than for cooking indoors so if you can do that too, then you won't be always looking for it in the other kitchen! 

Always keep your equipment washed and cleaned after each cooking session so you are ready for the next time you want to cook.

Getting ready to cook - setting up the fire in the oven

David will show you how we set up the fire in the Morso forno using a heat deflector to keep the fire to one side and to create a larger cooking area than if you don't use it. 

He is also using the roof of the oven to do some cooking as this is a great heat source too. Morso don't recommend this but we have never found any problem with it. If you are going to try this, you need to have high heat resistant magnets and silicon sheets. 

Also don't put anything on top that is laden with toppings - eg a very cheesy/saucy pizza as the toppings might slide off on to the forno. Again this has never been a problem for us and if anything does get on the outside of the oven we just wash it off after the cooking session with hot soapy.
